Chocolate Chip Muffins

(Gluten/Dairy Free & Vegan)

These are some of our favorite muffins! This recipe uses chocolate chips, but I've also made these with blueberries and even peaches! I'm actually considering trying to turn this recipe into a peach cobbler soon, so be on the lookout! 
Ingredients:
*I haven't tried this recipe with any other flour than the linked Bob's Red Mill. Let me know if you do and how they turn out!

Directions:
  1. Preheat oven to 400F.
  2. Combine dry ingredients and mix.
  3. Chunk up the banana and place on top.
  4. Add in melted coconut oil & non-dairy milk and mix with a hand mixer.
  5. Fold in chocolate chips.
  6. Oil (well)12 muffin cups or 24 mini muffin cups. Fill batter almost to top. 
  7. Bake 20 minutes. 
  8. Allow to cool and enjoy!
