Turkey and Zucchini Fritters

(Paleo)

Ingredients:
  • 1 lb. Organic Ground Turkey
  • 3 Organic Zucchini (grated with skin on)
  • 1 Bunch Green Onions (diced)
  • 1 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • Sea Salt & Pepper to taste
  • Coconut Oil, for "frying"
Directions:
  1. Grate zucchini (with skin on) in a medium-sized bowl.
  2. Mix in diced onions, spices, and ground turkey.
  3. Lightly oil a griddle or pan with coconut oil.
  4. Turn the turkey and zucchini mix into patties (I get anywhere from 24-30 depending on size).
  5. Cook 3-4 minutes on one side. Flip and cook 3-4 minutes on the other. 
Serve with a couple sides of roasted veggies, Organic Brown Rice, or Organic ketchup if you're my four-year-old HA! Even though I'm not a huge fan of condiments, I love to eat these with a little Dijon mustard. What's your favorite dipping sauce?
