Turkey and Zucchini Fritters
(Paleo)
Ingredients:
- 1 lb. Organic Ground Turkey
 - 3 Organic Zucchini (grated with skin on)
 - 1 Bunch Green Onions (diced)
 - 1 tsp Garlic Powder
 - 1/2 tsp Onion Powder
 - Sea Salt & Pepper to taste
 - Coconut Oil, for "frying"
 
Directions:
- Grate zucchini (with skin on) in a medium-sized bowl.
 - Mix in diced onions, spices, and ground turkey.
 - Lightly oil a griddle or pan with coconut oil.
 - Turn the turkey and zucchini mix into patties (I get anywhere from 24-30 depending on size).
 - Cook 3-4 minutes on one side. Flip and cook 3-4 minutes on the other.
 
Serve with a couple sides of roasted veggies, Organic Brown Rice, or Organic ketchup if you're my four-year-old HA! Even though I'm not a huge fan of condiments, I love to eat these with a little Dijon mustard. What's your favorite dipping sauce?
