Power Cooker Crustless Chicken Pot Pie
(Gluten & Dairy Free)
This is a quick, easy, delicious, and filling recipe for any night of the week! My whole family loves it (excluding my 11-year-old who's never been known to eat his vegetables). Adapted from this recipe.
Ingredients:
- 4 Organic Chicken Breasts (thawed)
- 1 bag Organic Frozen Peas
- 1 bag Organic Frozen Green Beans
- 1 bag Frozen Sliced Carrots
- 1 cup Organic Quinoa (rinse quinoa if it isn't labeled pre-rinsed)
- 2 cups Organic Low-Sodium Chicken Broth
- 1/2 cup Organic Canned Coconut Milk
- 1/2 cup Bragg's Liquid Aminos
- 1/4 cup Raw Honey
- 1 Red Onion-diced
- 1 tsp Garlic Powder
- 1/2 tsp Ground Ginger
- 1/2 tsp Cumin
- Sea Salt & Pepper to taste
Directions:
1) Add all ingredients to your Power Cooker and mix.
2) Set Cook Time to 10 minutes.
3) Press the release button to release the pressure and allow all steam to exit.
4) Take out chicken, shred it, and add back to power cooker.
5) Mix, serve, and ENJOY!
Since I cook for my crew of 6, this recipe makes a large amount. Feel free to cut it in half for a lesser amount of people.
