Gluten Free Waffles

Ok, seriously, who doesn't love a warm, delicious waffle with a side of bacon??? I love to make these waffles not only for breakfast, but also for dinner! They are sooooo good AND filling! They freeze well too, so if this batch makes too many for you, just throw the extra in some ziplock bags and toast or warm in the microwave when you're ready for one!

Ingredients (makes 7-8 Belgian waffles):


Directions:

  1. Combine unsweetened coconut milk and ACV. Lightly mix. Allow to sit for 5-10 minutes and "curdle". This creates a dairy-free "buttermilk" (tuck this tip in your back pocket for subbing buttermilk in the future).
  2. Mix dry ingredients.
  3. Add in the eggs and "buttermilk" mixture to the dry mix. Whisk/mix.
  4. Melt coconut oil and mix into the bowl.
  5. Place batter in a Waffle Iron and top with blueberries, dairy free chocolate chips, or nuts!
  6. Serve with some Pure Maple Syrup and a side of nitrate free bacon-Y-U-M!!!
